You should keep [Gmail]/All Mail as you need to drag/move to it to remove  
labels. (As an alternative though, you can remove labels just by adding  
the \Deleted flag to the message)

Read through <http://operawiki.info/GmailImap> to see how Gmail IMAP  
works. Although it's for Opera, all the Gmail-specific stuff applies to  
Sylpheed too and any other IMAP client.
