I observe that the "From" field of a new forwarded message matches the
"To" of the original message if it is a known account, and apparently it
falls back to the first in the account list when the "To" is not
recognized.

What does the "To" of the original message look like when you see the
undesired behavior?

This one can be done with "Actions":

1. Add a new Action:
     Configuration -> Actions...

     Menu name: Edit message
     Command line: gvim -f %F
     [Add]

2. From any folder you can select a message and:

     Tools -> Actions -> Edit message

   The save and the changes will be in the original message.

I use this functionality mainly to adjust headers (missing In-Reply-To).
