As far as I know, Sylpheed doesn't copy it to the server too.

I think I didn't explain myself well beforehand. I want:
1. Saving sent emails for all accounts, except Gmail's IMAP account.
2. Gmail itself still save sent emails for its IMAP account
3. If possible, Gmail not saving sent emails in my other (POP3) account,
but that is not that important.

The problem with your technique is the mailbox in the local computer is
common to all accounts, including Gmail's IMAP account, so if I enable
saving of sent emails that Gmail IMAP account also gets sent emails
saved in my common mailbox, which I don't want.

I think I'm not understanding you well. How am I going to leave for the
POP3 account it as default unlike the IMAP one?

I keep all my email at server for the IMAP account, out of convenience
and of consistence (since it's an IMAP account).
Best regards.
